In the To joint and client letters I am having a difficult time getting the first paragraph to actually show up on the printed version. I have made some changes to the template itself, by adding some new information as well as the company logo. All the information I have added to the actual Profile template prints, however the first paragraph on the actual default tamplate is not printing??
How do I find field codes that arent in the actual field code list? I want my own field codes.
Any suggestions?

Did you check that the conditional statements at the beginning of your letter aren't stopping the printing?
Also, is the top-of-the-page logo interfering with the first paragraph?
I transfer the field code for a particular item by right clicking on the field and then copying that field code to the template.

Also, if you want to use additional field codes, change the monitor (right-click on the bar at the bottom of the program screen) to "Field Code". Then you'll notice that the field code shows up on the monitor bar whenever your cursor is in a field. You can use those field codes in your letter. You can really customize your letters using these field codes.
