Are there any tax deductions a client can use for giving their time ( one month services) and expenses (airfare of $5000) out of country. There is no money received by them and their "accomodations" are on a church base with "bare minimums". Are there any deductions I can use for them?

Not on their tax return. They should have donated the money to the church, then volunteered to serve provided fees were reimbursed.
